Recipe - Zigeunerschnitzel (Gypsy Schnitzel)

  • Ingredients for 2 people:
  • 2 veal or pork cutlets
  • 1 red pepper
  • 8 mushrooms
  • 1 onion
  • 125 ml red wine
  • 1 tsp tomato paste
  • flour
  • oil
  • ajvar
  • salt, pepper, paprika

Preparation:

Zigeunerschnitzel

Season cutlets with pepper and paprika and dredge in flour. Heat some oil in a fry pan and sear cutlets on both sides. Reduce heat and continue frying for ca. 4 minutes. Remove cutlets and keep warm in the oven.

Schnitzel meat

Clean and quarter mushrooms. Wash peppers, remove seeds, and slice in strips. Peel, halve, and slice onions.
Heat some more oil in the same fry pan. Lightly fry mushrooms. Add onion slices and sweat until translucent. Add pepper slices and braise all ca. 5-10 minutes.
Deglaze with red wine and reduce. Add tomato paste and season with ajvar, salt, pepper, and paprika to taste.

Take cutlets out of the oven and arrange on 2 plates. Season with salt and ladle on sauce. The Zigeunerschnitzel is finished!

A tasty potato dish is a good side dish. Zigeunerschnitzel is usually served with french fries!
