- Ingredients:
- 12 young herring filets
- 3-4 red onions
- 500 ml red wine vinegar
- 150 g sugar
- 2 bay leaves
- 5-6 tbsp chopped dill
- 1 preserving jar
Preparation:

Put red wine vinegar, sugar, and bay leaves into a pot. Bring to a boil and cook until the sugar has completely dissolved, stirring constantly. When the marinade is cold, add dill.
Rinse herring filets under cold running water and pat dry with paper towel.

Peel onions and slice into fine rings. Alternately place onions and herring filets into the preserving jar and pour over the dill marinade to cover.
Close jar and let the herring filets stand for 2 days in a cool place (not the refrigerator).
Young herring filets taste best served simply with coarse rye bread and butter.
