- Ingredients:
- 1 kg tomatoes
- ½ onion
- 1 tbsp flour
- 750 ml salted water
- 1 tsp instant vegetable stock
- 50 ml cream
- thyme
- 2 tbsp finely chopped parsley
- pinch of sugar
- salt, pepper
- 20 g butter
Preparation:

Halve tomatoes and cook with thyme for 10 minutes in salted water until soft. Press through a fine sieve.
Peel and finely chop onion.
Heat butter. Sweat onion until translucent. Dust on flour and continue to sweat, but do not brown. Add strained tomatoes.
Season to taste with salt, pepper, and sugar. Add instant vegetable stock and simmer for 15 minutes.
Beat in the cream and sprinkle on parsley.
