- Ingredients for 6 people:
- 200 g waxy potatoes
- 50 g old gouda cheese
- 2 shallots
- 8 cherry tomatoes
- 6 thin slices serrano ham
- 4 eggs
- salt, pepper
Preparation:

Boil potatoes, let cool, peel, and dice ca. 1 cm pieces. Fry golden brown in some sunflower oil and season with salt and pepper.
Peel and dice shallots, and add to the browned potatoes. Sweat everything again briefly.
Quarter cherry tomatoes. Add a dab of cold butter to fry pan and then add tomatoes.
Beat eggs in a bowl and grate in gouda cheese. Season with salt and pepper.
Pour egg mixture into the fry pan and stir until it begins to set.
Push the omelette to one side of the pan into a half-moon shape and let set to completion.

Remove from fry pan, cut into six equal parts and garnish with serrano ham.
