- Ingredients for 2 entrées:
- 2x 250 g sheep cheese pieces (feta)
- flour
- 1 egg
- ½ lemon
- oregano
- 3 tbsp olive oil
Preparation:

Baked sheep cheese is a Greek specialty and is known as saganaki. Although there are various recipes with different herb coatings, this original version has none and is prepared as follows:

Cut both pieces of cheese into 4 equal-sized portions. Be sure to use sheep feta and not feta made of cow’s milk or other cheaper variants.

Whisk egg in a deep dish. Spread some flour on a plate. Dip the portions of cheese in the egg and then cover all sides with flour.

Heat some olive oil in a fry pan and sauté the floured cheese on all four sides. It should take about 5-8 minutes until the cheese is evenly browned on all sides. Add more olive oil if necessary.

Take the cheese out of the fry pan and drain on paper towels. Arrange on plates, drizzle on lemon juice, and sprinkle with oregano. Enjoy saganaki plain, with some bread, or as a side dish to a salad.
Note: The ingredients given here are for two generous servings. As a starter or a side dish for a salad there is plenty to serve 4 people.
