  • Ingredients:
  • 1 eggplant
  • 1 zucchini
  • 1 carrot
  • 1 red pepper
  • 4 tomatoes
  • 1 Spanish onion
  • 3 cloves garlic
  • 1 tsp fresh chopped rosemary
  • 1 tbsp fresh chopped thyme
  • 1 tbsp fresh chopped parsley
  • 1 tsp sugar
  • olive oil
  • salt, pepper

Preparation:

Thoroughly wash vegetables and cut into largish pieces. Tomatoes should be skinned before chopping. Wash and chop herbs.

In a fry pan, brown carrot pieces over high heat. As soon as carrots are browned put in a large pot on low heat.

Brown pepper, zucchini, onions, and eggplant and add to pot.

Then add tomatoes, crushed garlic, and sugar. Let simmer until the vegetables are tender but still crisp (ca. 20-30 minutes).

Add herbs and season to taste with salt and fresh pepper. Add more herbs to taste.

You can serve almost anything as a side dish. Potatoes, rice, pasta, a piece of baguette, or just serve it plain.

By the way: Ratatouille originates in the provençale French kitchen. For this dish, you can use anything that tastes good. Simply experiment with different vegetables and herbs such as basil, marjoram, oregano, lavender, or sage.

It also seems that no one really knows how this dish is spelled. Ratatouille is correct and ratatoille, ratatulli, ratatui, etc., are wrong!
