- Ingredients:
- 1 kg goulash meat
- 500 g onions
- 4 red peppers
- 800 g diced, canned tomatoes
- 1 bottle red wine
- 1 l chicken stock
- 300 g mushrooms
- typical goulash spices: grated rind of untreated lemon, garlic, caraway, and marjoram (all finely chopped)
- some chili (flavour to taste)
Preparation:

Cube meat into ca. 3 cm pieces and sauté in oil in a large pot until brown on all sides.
Cut onions in fine slices and add to the browned meat. Lightly sweat the onions and then deglaze with some of the red wine.
Cut peppers into fine slices and add to the pot.
Continue deglazing and reducing until all the red wine is used. Flavour with salt and pepper, and add chicken stock and tomatoes. Cut mushrooms into slices and add to the goulash soup.
Let simmer until the meat is soft and the onions and peppers are almost mushy. Flavour to taste with goulash spices and thicken with starch if necessary.
