Recipe - Cantuccini (Almond Cookies)

  • Ingredients:
  • 175 g almonds
  • 250 g flour
  • 150 g sugar
  • 1 tsp baking powder
  • 2 pkg vanilla sugar
  • ½ vial bitter almond oil
  • pinch of salt
  • 25 g warm butter
  • 2 eggs

Preparation:

Put all ingredients into a mixing bowl and knead into a dough. Make a round ball out of the dough and let stand in the refrigerator for 30 minutes.

Cut dough into 4 equal pieces and roll out each piece into 25 cm long rolls. Flatten the rolls slightly with your hand.

Line a baking sheet with parchment paper and bake rolls in an oven preheated to 200° C for 10-15 minutes.

Remove cantuccini rolls from the oven, let cool slightly, and cut into 1 cm thick diagonal slices. Place on the baking sheet with the cut side down and bake for another ca. 10 minutes. The cantuccini are done when they have a golden brown colour.

Let cool and store in a closed metal container.
