  • Ingredients for 6 people:
  • 6 slices ciabatta or other white bread
  • 2 cloves garlic
  • olive oil
  • 3 tomatoes
  • 2 spring onions
  • 15-20 leaves basil
  • salt, pepper

Preparation:

Cut crosses into the tops and bottoms of the tomatoes. Place in a sieve and pour boiling water over them. The skins should now slide off easily.

Cut skinned tomatoes into small pieces and spring onions into fine rings. Coarsely chop basil. Season and mix everything in a bowl.

In the oven, grill bread (best done on the grill rack), rub on the peeled garlic cloves, dribble on olive oil and salt to taste.

Spread tomato mixture on the hot bread slices and serve while still warm. Bruschetta is a perfect starter or a tasty snack.

By the way: Bruschetta can be easily varied. Just try it with garlic, olive oil, and salt (a classic) or garnish with paper-thin slices of ham (Pecorino, Parma). A tasty hard cheese is also excellent. Or try something different, e.g., grilled vegetables like zucchini, egg plant, or pepper. Just suite your taste.
