Recipe - Apple Cake

  • Ingredients:
  • 100 g butter or margarine
  • 100 g sugar
  • 1 pkg vanilla sugar
  • pinch of salt
  • grated rind of ½ organic lemon
  • 2 eggs
  • dash of milk
  • 250 g flour
  • ½ pkg baking powder
  • 4-7 tart apples

Preparation:

Cut up butter or margarine and beat in a warm bowl until foamy.

Gradually add sugar, eggs, vanilla sugar, and grated lemon rind, beating constantly. As this is a batter, be sure to beat at least 4 minutes per egg.

Sift flour and baking powder and gradually add to batter, alternately with milk.

Spread batter in a greased springform pan (24 cm diameter).

Peel, quarter, core, and slice apples. Evenly spread apples onto the batter.

Bake apple cake for 50-70 minutes at ca.180° C. After baking sprinkle on slivered almonds if desired.

The cake tastes best served lukewarm with whipped cream.
